Job Title: Head of Bars & Mixology

Position Overview

The Head of Bars & Mixology oversees all bar operations as well as the Mixologists to ensure that they provide high standards of service to guests. Other responsibilities include maintaining an exceptional standard of professionalism, conduct and service in the bar, managing the budget and generating revenue to achieve profitability for the resort.


The Role

  • Provides inspirational leadership, clear vision and direction to colleagues to ensure delivery of the Patina brand, values and vision, to create an amazing experience for our guests and colleagues.
  • Be an exemplary role model in inspiriting colleagues through strong demonstration of the Patina Culture and Service Philosophy.
  • Anticipate guests' service needs, including asking questions of guests to better understand their needs and provide personalised service through noting down guest preferences.
  • Performs the daily opening/closing shift duties of the bar and ensures that all colleagues comply with service standards, departmental policies and operating procedures set by the resort.
  • Provide exceptional service to guests by promptly welcoming and courteously serving guests while engaging in meaningful conversation.
  • Be fully informed of beverage and menu offerings, in anticipation of guest needs and to deliver highly attentive service.
  • Responsible for crafting original beverage menu items and designing new, innovative cocktails and train mixologists on molecular mixology beverages.
  • Administer purchasing and receiving procedures for bar items and ingredients.
  • Manage site/outlet and equipment maintenance and ensure the bar and its equipment are clean and fully functional.
  • Ensures that the bar area is kept clean and organized, maintaining all sanitation standards of the business and local food and beverage laws.
  • Responsible for inventory checks and management of all bar supplies, ensuring that all stocks are maintained at PAR level. Notify supervisor/manager when stocks are running low.
  • Maintain a record of inventory supplies and inform the team should any item is low, running out.
  • Recognizes the importance of LQA and Forbes standards as to deliver excellent audit and service performance.
  • Maintain an up-to-date knowledge of the resort's daily services, activities, promotion, and event. Effectively communicate and update all colleagues on any changes to ensure guests receive up-to-date information.
  • Handle complaints and resolve service 'glitches' and keep a record of all feedback under the appropriate system. Ensures that the issues are resolved in a timely manner to guests' satisfaction.
  • Check in with guests on their orders in an un-intrusive, discreet manner to obtain feedback for continuous improvement.
  • Complies to the local law of alcohol service and food hygiene policy and procedures set by the resort at all times.
  • Maintains strong working relationships with other departments to ensure effective communications for operational issues, serves as a role model for inter-departmental collaboration and support
  • Foster a positive working environment for all colleagues and check in regularly to ensure colleagues' satisfaction and maintain strong working relationships within the team. Give praises and encouragements for good performances.
  • Empower colleagues to take ownership and responsibility in going beyond to exceed guest expectations. Delegate responsibility and expect accountability and regular feedback.
  • Monitor performance of colleagues and provide effective feedback for improvements, recognition and performance appraisal as due.
  • Mentor and guide individual colleagues' growth and identify short to long-term goals to achieve and ensure high colleague engagement and welfare.
  • Take ownership of individual's growth and be involved in career progression and succession planning of colleagues.
  • Perform other duties or responsibilities that are reasonable as assigned by your immediate supervisor or manager.

Talent Profile Qualifications:

  • General Certificate of Education / Diploma, preferably in Hospitality or Bar Management.
  • Certification of Mixology or equivalent is an advantage.

Work Experience:

  • Minimum five (5) years of experience with at least two (2) years' experience in a similar role in luxury resort / hotel.
  • Have previous bartending and mixology experience.

Skills Set:

  • Good command in written and spoken English.
  • Service-oriented with strong interpersonal and communication skills to keep guests entertained in addition to extensive knowledge of alcohol and cocktails of all types.
  • Creative personality with an excellent eye for details.
  • Ability to multi-task while displaying great organizational skills.
  • Time-management skills and the ability to work under pressure to ensure the efficient running of bar operations.
  • Have mastered cocktail components.
  • Have excellent understanding and analysation of spirits.
